Sautéed Grey Oyster Mushrooms

Sautéed Grey Oyster Mushrooms with Garlic & Green Onions (Serves Two)

Ingredients:

> ¾ tablespoon olive oil

> 250 grams grey oyster mushrooms, cleaned and torn into bite-sized pieces

> 1½ garlic cloves, minced

> 1½ green onions, chopped

> Salt and pepper to taste   

Method:

1. Heat olive oil in a medium frying pan over medium heat.

2. Add the mushrooms and garlic, sautéing for 2-3 mins, stirring occasionally.

3. Reduce the heat slightly, sprinkle with salt, and cover the frying pan. Let the mushrooms cook for 5-7 mins, stirring occasionally.

4. If excess moisture remains, cook uncovered for 1-2 mins to evaporate it.

5. Stir in half of the chopped green onions, season with salt and pepper, and mix well.

6. Serve topped with the remaining green onions.

This should provide a well-balanced portion for two, though slightly lighter.  

This dish pairs well with grilled meats, rice, or even as a topping for toast.
