Roasted Golden Oyster Mushrooms with Herbs

Ingredients:

  • 250 grams golden oyster mushrooms, cleaned and trimmed

  • 1 tablespoon olive oil

  • 1 teaspoon fresh thyme leaves (or rosemary)

  • ½ teaspoon smoked paprika (optional, for depth)

  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 200°C (400°F).

  2. Toss the mushrooms with olive oil, thyme, smoked paprika, salt, and black pepper in a bowl.

  3. Spread them out on a baking sheet in a single layer.

  4. Roast for 15-20 minutes, flipping halfway through, until they are golden and slightly crispy.

  5. Serve as a side dish, or mix into salads, pasta, or grain bowls for extra flavour.

This method enhances their natural nuttiness while keeping them tender.
